Grass-Fed Lamb:

  • Internal temp: 135°F for medium-rare or 145°F for medium

  • Always use a meat thermometer for accuracy

Remove lamb from the fridge about 30–45 minutes before cooking. This helps it cook more evenly and stay juicy.


3. Use Lower Heat and More Time

Because it’s leaner, grass-fed lamb benefits from gentler cooking methods:

  • Slow roasting

  • Braising

  • Crockpot or Dutch oven recipes

For quick-cook cuts (like chops), start with a hot sear, then reduce the heat to finish cooking more gently.
